how to remove fields in the ‘subtotal’ component

Hi,

I’d like to add both ‘subtotal’ and total components in one of email templates but for the ‘subtotal’, I’d like remove ‘shipping’, ‘refunded’ and ‘order fully refunded’ fields and I’m wondering how? Can’t find in the manual on how to do that. Let me attach a screenshot just to ensure you understand what I’m referring to.
