Lock Modified Date

Hi
I want to change some details in the description on some products and wondered if i turn on the Lock Modified Date switch, once changes have been made, will that keep the new details but allow for adjustment on any price change, or will turning it on stop any new information like price , stock levels from changing if there is an price increase etc.
