Remove Tax Option, and deposit on order option

Hello,

#1. I would like to know if there is an option to be able to remove the tax when submitting a sale. Sometimes we deduct the tax charged to customer or include it in the total price, but there is no way to make it 0 on the POS. Can this be?

#2. We have customers that order products which are not in store, so they will leave a deposit and then pay the rest when item comes in for them to pick up. How can I have this option?
