Select Order-How to see find order not listed in test “select order” drop down

I created template from a “customer note” template and even used the template itself to try and select order under “testing” on right side panel, but it only shows 7 different orders to select. How do i get the order that i want to sent my customer note template too? I need to be able to access any order i need to send email to.
